Processing grade maple syrup often comes from the last flows of the sugar season, giving it a more typical maple taste and darker color. In Quebec, maple syrup is classified by an independent organization, known as Centre ACER.
Quebec produces about 73% of all of the world’s maple syrup production, thanks to the work of 11,300 maple syrup producers who make about 50,000,000 taps per year. Of all the maple syrup produced each year, about 17% is classified as processing grade, and will be used by food processors around the world.
